Chef Freitas' Savoury Masala Pancakes
A great friend and extremely talented chef Luis Freitas took on an exciting challenge to incorporate our garam masala into a new way of cooking. As part of his Cooking with Friends series - a wonderful ongoing project where Luis is using social media to connect with chef friends to cook remotely, together - he worked with fellow food lover Tatiana Gonçalves to develop something that emulated their shared interest in Indian food whilst also infusing it into an unexpected dish. They worked from a previous recipe and experimented with some new additional flavours to bring us Savoury Masala Pancakes!
This dish is perfect if you’re looking for a crowdpleaser which mostly comes out of your pantry essentials. The warmth from the ginger merges with the fragrancy of the coconut oil giving a beautiful South Indian base to these pancakes. Our GoldDust spice blend is added to the pancake mix to ground the all these elements into a beautifully rich and complex combination of flavours.

Ingredients:
Serves 2
1 cup of flour
½ cup of yoghurt
½ tsp of baking powder
¾ tsp turmeric
¾ ginger paste
1 tsp garam masala
1 tsp coconut oil
Spring onions
Coriander leaves
Salt and pepper, to taste
Topping suggestions:
Feta, crumbled
Carrots, grated
Sliced red onions, raw
Yoghurt, mixed with herbs
Spiced chickpeas, e.g. paprika
Mint leaves, picked
The Recipe
1. Mix all ingredients together in a large bowl, creating a thick paste. Add water slowly in small increments, until you reach a moderate thickness - avoid a runny batter!
2. Heat coconut oil in a non-stick frying pan or tava.
3. Once hot, add a ladle of your batter and allow to cook. Once the top of the pancake begins to bubble, turn it over and cook the other side, until both sides are golden brown.
4. Add toppings of choice, and serve immediately!
